Airbrushing on cakes is a relatively recent phenomenon. For years colour was added directly to sugarpaste, marzipan and royal icing which is time consuming, messy and wasteful. By contrast, using an airbrush is fun, with the minimum amount of colour being applied quickly and easily to the surface of the design producing a very professional finish.
The techniques shown in this video include spraying novelty cakes, using various acetate stencils, working on sugarpaste, pastillage and rice paper. Cleaning of the airbrush is also carefully explained.
